Happy St. Patrick's Day

For the first time in the 7 + yrs Zipper and I have been together, I acutally cooked the Corned Beef, well put in the crock pot at 5:20AM this morning.

He will be happy, me I'm not sure, but like every year I'll eat it.

Happy St. Patty's Day.

I've got one that's going in the pot at 4.

It should be ready to eat (along with the cabbage, carrots, and red potatoes) around 6:30.

I really don't see what the big deal is about corned beef & cabbage is. And why is it reserved for just St. Patty's day? :?

Mrs. Eddie made a batch of Irish stew for a fund raiser at work and there are leftovers. So that's dinner tonight. In fact I'm going home to get some food. :)

Corned beef and cabbage is a big Irish dish, therefore they serve it on St. Patty's Day. I love the stuff, minus the cabbage.

You haven't had mine - mine is still pickling as we speak - I make mine from scratch, with no nitrates.

It's Very yum! I usually make mine out of a chuck roast vs a brisket - A full brisket has a boatload of fat.

This year I used a brisket - no good chuck roast sales. This Sunday we'll find out how it went.
